WE'VE USED A PRESSURE COOKER FOR THIS DISH
The addition of our Whole Cloves, make this Silverside one to really salivate over. the sour, sweet, salty and spicy flavours are perfectly balanced in this dish - and it's one the kids will love as well!
Ingredients
1.5 – 2kg Silverside
1 ½ - 2Ltr Water (do not exceed max. level in your pressure cooker)
1 ½ tsp Whole Black Peppercorns
2 tbsp Brown Sugar
2 tbsp Sea Salt
3 tbsp White Vinegar
10-12 Whole Cloves
Method – using pressure cooker
- In the OFF position, add water, vinegar, peppercorns, brown sugar, salt and cloves the the bowl of your pressure cooker and give it a good stir
- Add the whole silverside to the bowl – it should be covered or at least close to being covered with the liquid)
- Lock pressure cooker lid into place and turn control to “roast” (30mins)
- Take a seat for 25mins
- Do not release pressure but instead turn dial back to “roast” (30mins) and leave to continue cooking – total cooking time is 55mins
- Once cooked release pressure and remove silverside
- Allow to rest for 5-10mins before slicing
- Enjoy with roast potatoes and seasonal veggies
