Looking for a light bright and tasty brunch, lunch or snack? Our P2P Italian Herbs bring life to these beautifully luscious peas. Paired with sweet tomatoes and a little punchy fetta this tasty treat will have you wanting more and more.
Ingredients
150g frozen Peas
40mL thickened Cream
40g unsalted Butter
1Tsp Italian Herbs
4 Slices of Olive Pane Di Casa
2 Tbsp Chèvre Goats Cheese
½ Pack of Cherry Tomatoes halved
Rocket and Olive Oil to Garnish
Method
- Place frozen peas, cream, butter and Italian herbs into a small saucepan on medium heat until cream bubbles and peas are bright green
- Puree with a stick blender
- Slice and halve olive pane di casa to you preferred thickness
- Toast under a grill
- Serve a dollop of pea puree on pane di casa
- Top with goats cheese and halved cherry tomatoes, rocket and a drizzle of olive oil
