Ingredients
Buns:
2 Tsp Dried instant yeast
200g Warm water
70g Warm milk (30secs in the microwave)
550g Bakers flour
70g Sugar
4 Tsp Masala Chai
30g Melted butter
100-150g Mixed fruit (depending on how much fruit you like in your hot cross bun)
Cross:
50g Water
50g Plain flour
Glaze:
40g Water
40g Sugar
Requires ThermomixTM
Method
For the buns:
- Add water, yeast, milk, butter and sugar to your ThermomixTM bowl and heat at 40° for 3 mins at speed 2
- Add flour, salt and masala chai to the bowl and mix for a further 40 secs at speed 3
- Scrape down the sides of the bowl and then use the knead function for 2 min
- Add mixed fruit to the bowl and continue with the knead function for a further 50 secs
- Remove the dough from the ThermomixTM and work into a ball. If the dough is slightly sticky, add a little flour to your hands to assist with removing it
- Place dough in lightly oiled bowl, cover with glad wrapping and leave in a warm place to double in size (approx 30mins)
- Divide the dough into 12-18 (for standard sized) or 18-24 (for mini) equal sized balls
- Place onto a baking sheet quite close together and cover with a tea towel. Leave in a warm place to allow them to rise (approx 15mins)
For the Cross:
- Preheat the oven to 170° C
- Mix the flour and water together by hand in a small bowl
- Using a piping bag (or a sandwich bag with the corner cut off), pipe the cross on top of the buns
- Bake Hot Cross Buns for 25-30 min
For the Glaze:
- Microwave the sugar and water for 50 seconds and give it a good stir
- Once the hot cross buns are cooked, remove from oven, brush on glaze whilst the buns are still hot.
- Leave to cool in the baking sheet before removing
- Serve warm with butter

Thank you so much P2P for this delicious Masala Chai Hot Cross Buns. The P2P Masala Chai in the buns has changed the taste of the traditional cinnamon & mixed spices Cross Buns. It’s delish. My next adventure, I’ll try the P2P Masala Chai on apples.
