Gateau Banane - Mauritian Banana Fritters

Fellow "Mossies" (Mauritian-Aussies), will know that after-dinner craving for something sweet followed by the realisation that all they have is some ripened banana's. Instead of disappointment, excitement kicks in as memories of this traditional favourite flood back, and before you know it, you're in the kitchen at 9 p.m. whipping up some Gateau Banané.


Ingredients

4 Ripe Bananas
1 Cup of White Sifted Flour
1 Egg
1 Tsp of Baking Powder
1 Tsp of Cinnamon Powder
1/2 Tsp of Vanilla Essence
1 Tsp of Brown Sugar
1 Pinch of salt
Vegetable oil for frying


Method

  1. Start with mashing the bananas with a fork until mushy, gooey and soft
    (lumps are ok).

  2. Add flour and combine

  3. Add Cinnamon, baking powder, vanilla, salt and egg and combine

  4. In a bowl, mash the bananas until mushy soft.
    *This can be done earlier and kept in the fridge until ready to cook and eat.

  5. Heat the oil in a small pot to a medium heat

  6. Using a tablespoon, spoon batter in the oil forming one ball at a time
    (don’t over fill the pot).

  7. Fry on low/medium heat until deep golden brown

  8. Remove and place on paper towel, so the paper can absorb the excess oil

  9. Sprinkle some brown sugar over the top and eat immediately

Nice recipe..only thing is ..I think the egg keep the gâteaux bananes a bit too soft
I will try next time without egg.. thanks for sharing
